Rational is recalling approximately 4,800 SelfCookingCenter XS 61 and 101 commercial combination ovens installed in restaurants, hotels, and institutional kitchens worldwide after receiving 17 reports of fires originating from the grease trap overflow channel, including 3 significant kitchen fires causing structural damage and two minor employee burn injuries. The defect is in the grease trap drainage design, where a manufacturing error causes the overflow channel to become partially blocked over time with accumulated grease and food residue, eventually causing hot cooking grease to bypass the drainage system and come into contact with the electric heating element located directly below the cooking chamber. When hot grease contacts the heating element, the result is a flash fire that can spread rapidly through the kitchen ventilation system. Restaurant owners and facility managers who operate these ovens should check their serial number against the recall list and schedule an immediate inspection of the grease trap by a Rational authorized service technician, who will replace the drainage channel and install an additional overflow sensor that automatically shuts off the heating element if a blockage is detected.
